Chocolate chip cookies

Hello Everyone!!

i know i haven't posted in a while - last post was an old draft that needed small edits!- and i know that my fans are impatient and sad for my absence, hehehe, one has to work on one's own ego if no one else is, right?so, for my comeback we are making something sweet, for celebration!
today's recipe is chocolate chip cookies, sure anyone in the English speaking world can run to the supermarket and get them cheap and easy, but that's not the case where I am.. besides, admit it, the supermarket ones are never as good as your own baking, nor as satisfying.before the advent of the big chain supermarkets in Egypt - when i was little - i only saw these in American films:) and when i finally found them sold i found them to be very regular cookies only with the genius addition of the choco chips. now I make them often as they are quick and easy to make, and they serve as a great sweet snack to give to the kids, they can even take it to school and it doesn't crumple easy, and of course it is the perfect companion for your morning coffee, ummmm


2 cups all purpose flour
1 tsp baking powder1/2 tsp salt
3/4 cup butter - my Egyptian friends, don't be clever and use Ghee like we do with everything :) -
1 1/2 cup confectioner's sugar
2 large eggs
1 sachet of vanilla or 1 tsp vanilla extract
1 cup chocolate chips
or you can simply use a bar of cooking chocolate and break it to small pieces to your liking

1 cup crushed, toasted nuts of your liking (optional and can be substituted for an extra cup of chocolate chips, or the opposite)


in a large bowl, mix the flour, baking powder and salt.
in a separate bowl, beat the butter with an electric mixer until it becomes creamy, gradually add the sugar and continue beating until the mix becomes smooth like cream Chantilly.
add the eggs and vanilla and beat a little more until well blended. add the above mix to the formerly prepared flour mix and blend with a spoon or a mixer until smooth.
finally add the chocolate chips and/or nuts and mix in.

preheat the oven to 200 C. bring the baking sheet to be used and start forming the cookies by scooping some of the mix with a spoon and adding it to the sheet, the mix with naturally flatten a bit so no need to do more than just make sure the cookies are well spaced.
once the sheet is filled, sprinkle some choco chips and/ or nuts on top then it is oven time.

baking time is approximately 8-10 minutes, test one and once crispy or toasted at the bottom then it is done.
remove and store in air tight jars to keep from going moist.

Very nice and simple chocolate chip cookie recipe. Oh yeah the grocery stores have got nothing on homemade cookies.

I never tried making cookies with confectioners sugar! I should try this! I always use a mix of brown sugar and granulated sugar. :)
