Cordon Bleu

or let's say, my Cordon Bleu

the regular Cordon Bleu, for those who don't know!, is typically stuffed with bacon or any smoked meat variety. however, i don't like mixing meat with meat, soooo.. i modified the dish a little to my liking.. hope it would be to your liking as well :)

1/2 Kg Chicken breast fillets cut thin
juice of one big grated onion
salt & pepper
grated cheddar cheese
1 tbsp cream (or more if needed)
1 green bell pepper, diced
all purpose flour
1 beaten egg, seasoned with s&p
yellow corn flour
frying oil

marinade the chicken breasts in onion juice, s&p and lemon for an hour or so, the longer the better.
mix the stuffing in a bowl (grated cheese, bell pepper, cream)
with a wooden meat hammer, beat the chicken slice until flat then add a tbsp of the prepared stuffing, spreading it lengthwise.
roll the chicken piece and secure with a toothpick, roll it in flour until totally covered, it should keep it together even without the toothpick.
roll it in beaten egg then in the yellow corn flour. repeat with the rest of the cutlets until done.
refrigerate the prepared rolls for about have an hour for extra coherence.
heat the oil in a large skillet, once hot start frying the rolls, make sure to turn them often so they are equally golden on all sides, once that is achieved, remove from oil and leave on paper napkin for a little while.

that's all ! i can imagine myself having some of that right now, with all the yummy melted cheese...

it could be served with any pasta type, or with Mahshi - aka Dolma- and it would go great.
